Vegetables and fruit I can eat with colitis:

Vegetables: Thoroughly cooked or canned, seeded and skinned pumpkin, eggplant, potatoes, sweet potatoes, green beans, wax beans, asparagus, yellow squash, and zucchini. I can also drink juice from these vegetables.

Fruit: bananas, peeled and cooked apples and pears, peeled and ripe peaches and nectarines, papaya, melon, avocado.
